Wine has accompanied our civilization for more than two thousand years, and it is the drink or food enclosing the most complex chemical composition. Indeed, about a thousand components have been identified in its structure. These components, which are defined minor constituents, have two properties: on the one hand, they reduce the proportion of alcohol in the blood, on the other hand, they reduce the negative effects of alcohol and enhance the positive ones.
When we analyze this topic, it is pivotal to make a necessary distinction between alcohol and wine: the former is the first fruit of distillation, while the latter is the product resulting from complete or partial fermentation of grape or fresh grape juice.
The alcohol obtained this way is the result of the transformation, from elements of the sugar grape, thanks to a subtle interplay of yeast, microorganisms that convert sugar into natural alcohol. This is the explanation of the chemical difference, but also of the potential different effects on the animal organisms.
