Sicilian Peas Omelette
 * 3 Eggs
 * 500 g Peas
 * 100 gr grated Pecorino Cheese
 * Parsley
 * Extra Virgin Olive Oil
 * Pepper
 * Salt

PREPARATION METHOD: Put peas in a pan with three tablespoons of olive oil.
Add salt and cook spraying hot water.
Beat eggs in a bowl with cheese, salt and pepper and mix.
Wash the parsley, chop it with a knife and add to egg mixture.
Drain peas, gently put them into the mixture and pour everything into hot oil in a pan.
Cook the peas omelette and serve it warm.
