Fried Pumpkin Blossoms
 * 500 g Pumpkin Blossoms
 * 2 Eggs
 * 100 grams of Flour
 * 250 g Breadcrumbs
 * Extra Virgin Olive Oil
 * Pepper
 * Salt

PREPARATION METHOD: Gently open each pumpkin blossom and remove thorny parts and the stem. Clean the flowers, wash them, being careful not to damage the petals. Rinse them and pat dry on towels.
In a bowl, combine the eggs with a pinch of salt and pepper. Mix well. Put the flowers in flour, then in beaten eggs and, finally, in breadcrumbs.
Put olive oil in a heavy bottom cast iron frying pan.
Fry a few flowers at a time, in plenty of boiling olive oil.
Let each blossom fry for 60 seconds and then turn it with a small wire strainer. Fry on the other side until golden in colour. Remove with the wire strainer, let drain and transfer to a plate lined with paper towels to remove excess oiliness.
Season each flower while still hot with additional salt.
Serve them immediately.
