Taglietelle with Zucchini
Ingredients
Serves 6:
 * 400 g Green Tagliatelle
 * 200 g fresh Ricotta Cheese
 * 3 Zucchine
 * 50 g Butter
 * 1 Onion
 * 3 tablespoons Extra Virgin Olive Oil
 * 1 Stock Cube
 * 1 Basil
 * 50 g grated Parmesan Cheese
 * 3 tablespoons Milk
 * 1 Salt
 * Pepper


PREPARATION METHOD:
Wash zucchini and cut them into thin slices. Brown the onion in olive oil in a large frying pan. Add zucchini and cook over high heat, stirring with a wooden spoon. Crumble the stock cube on the zucchini, add a little hot water and cook for about 20 minutes on medium heat. Put the ricotta in a bowl and mash it with a fork, then add 3 tablespoons of milk, a pinch of salt and pepper. Keep the ricotta cheese warm. Put the butter with chopped basil in a small saucepan, mixing well. Meanwhile, cook the tagliatelle and drain them. Dress immediately with melted butter and basil, then add the ricotta and zucchini, stirring well. Sprinkle with Parmesan cheese and serve them hot.
