Chianti DOCG "La Pieve"
GRAPE VARIETIES: 85% Sangiovese, 7% Canaiolo, 5% Ciliegiolo, 3% Colorino.
VINIFICATION: As soon as the bunches are harvested, they are destemmed and soft-pressed. Maceration lasts 10 - 12 days, during which the must is subject to frequent pumping over and delestage to fully extract colour, complexity and tannins. The wine completes alcoholic fermentation at a temperature which never exceeds 30° C. It is then trasferred and completes malo-lactic fermentation by the end of the year.

AGEING: Until March in concrete vats.
SUGGESTIONS: Chianti "La Pieve" is perfect whit Tuscan cuisine. Serve at 15 - 18° C.
